Fiber One Muffins, Kale Chips! & In the News

Tonight I made these for the husband.   I had seen them on the shelf for awhile and they were on sale, so I figured why not.


I made mine with 1 egg and 2 egg whites, instead of 2 eggs and applesauce instead of veggie oil.

I ordered these great silicone cupcake thingermerbobs because I saw them on Stef’s More to Life Than Lettuce blog and thought they looked neat and they are!

Yum to the um, very good.

I was very pleasantly surprised.  These muffins are moist and light and so good I want to eat them all. But I won’t.  I don’t want to be shatting my pants tomorrow from all the extra fiber, thank you very much!

I got brave in the kitchen today and also made some Kale chips. Who knew!  Seriously, whoever thought this up is a genius.

I chopped the kale up into pieces, sprayed it with Pam Olive oil and sprinkled with Garlic Salt.  Then I stuck in the oven at 400 degrees for about 8 mins. I took them out when the edges got brown and a crispy.  I hear these are easy to overcook.  I just can’t get over the texture, it is so chip like. I will be making these again and again and again.

I read 2 articles today that really caught my eye.  The first my sister sent me and I just thought it was so cute:

I mean how sweet is that? This couple meets at the grocery and then gets married there. I love a good love story and I love a good grocery store, so put them together and it makes for a great story!

Would you look at this guy, he is 103 in that picture! He once lifted 3200 lbs, he started performing as a strong man in the 1920.  He got struck and killed by a car.  “A decorated World War II veteran and lifelong vegetarian, he could still bend coins between his fingers.”  What caught my ear when I heard about this during the news on Howard Stern was that he was a lifelong vegetarian.  People didn’t use to be vegetarians when he was a kid. So I just found that really interesting.  Now if he isn’t an advertisement for healthy living, I don’t know what is.

Did you see this article by Joy Bauer?  If not you can read it in full here.  Joy Bauer is the health correspondent on The Today Show and she has a weight loss club and awhile back my sister Tina and her husband Tim got to go to NYC and appear on the Today Show b/c they had lost over 300 lbs combined, you can read their story here.  I am actually going to start having a weight loss success story every Tuesday and my BIL is the first one I will feature, so check back tomorow to see where he is today!

Anyway, according to Joy, these are the 6 Skinny Foods for this year.


1. Pumpkin Pudding: Decadent, creamy pudding for less than 150 calories–and it helps you lose weight! Just combine a 6-ounce container of nonfat vanilla yogurt with ½ cup canned 100% pure pumpkin puree and a dash of cinnamon. The pumpkin bulks up the yogurt–already a protein-rich, nutrient-packed food–and adds a hefty dose of fiber. This winning combo of protein and fiber expands in your stomach, keeping you full long after you finish, so you’re not looking for more munchies an hour later.


2. Vegetable Soup: Studies have shown that just by starting a meal with a fiber-rich bowl of broth-based veggie soup, you can reduce your total calorie intake by 20 percent. That’s because this “veggie first course” helps to fill you up, so you wind up eating less at the main meal.


3. Cucumber Tomato Salad:  Thanks to their high percentage of water (95%!), cucumbers are low-calorie, high volume, and top-notch for weight loss! Slice up one whole cucumber plus a medium tomato, then toss with light vinaigrette or unlimited vinegar (balsamic or red wine is delish) plus 1 teaspoon olive oil. The entire salad has only 125 calories!


4. Ginger Green Tea: Nursing a warm mug of tea is a calorie-free way to de-stress after a long day without falling prey to emotional eating. As an added bonus, research suggests that regularly drinking green tea may give you a slight calorie-burning advantage. Steep your tea with a thin slice of ginger root for an extra punch of flavor.


5. Fiery Chicken Salad: Adding a few dashes of fiery hot sauce to your food slows down your eating big time so you’re less likely to eat past the point of fullness. For a simple lunch, whip up a chicken salad with diced chicken breast, 1 tablespoon reduced-fat mayo, hot sauce to taste, and any diced veggies on hand. Serve over a bed of lettuce (and have a glass of water handy!).


6. Shrimp Cocktail: At around 8 calories a piece, shrimp are a fabulous source of lean protein, which helps rev your metabolism and keeps you feeling full for hours. Next time you dine out, start your meal with a shrimp cocktail appetizer. When you’re eating at home, dunk your shrimp in this could-not-be-easier cocktail sauce recipe: simply combine 1 tablespoon ketchup with 1 teaspoon bottled horseradish.
