Recipe time – Cranberry Pork Roast

Since I am stuck in the house today, I decided to try a new recipe.  Harper has a really bad cold, so we won’t be leaving today.  My poor baby.  There is nothing worse to a moms heart than her sick baby and when they are this little there is literally nothing you can give them that helps.  Baby Tylenol and saline drops is all we get.  Yeah, you try getting something up a 7 months nose. If I had been aware of how often babies have colds I probably would have started using the bulb syringe on Harper everyday just to get her used to it. I can’t get it near her.  Anyway, the hubby and I went to Costco yesterday and got some meat, so I had a pork roast sitting in the fridge and decided I wanted to get out the crock pot.  I am a huge fan of the crock pot, but don’t usually do anything to exciting in it.  Here is the recipe I snagged from allrecipes.


  • 1 (3 pound) boneless rolled pork loin roast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (16 ounce) can whole berry cranberry sauce
  • 1/4 cup honey
  • 1 teaspoon grated orange peel
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg

    Directions




    1. Cut roast in half and place in a slow cooker; sprinkle with salt and pepper. Combine the remaining ingredients; pour over roast. Cover and cook on low for 4-5 hours or until a meat thermometer reads 160 degrees F. Let stand 10 minutes before slicing.


    I had to improvise a little on the ingredients.  I didn’t have any nutmeg, so I substituted ginger, yes I know they don’t really taste the same, but I thought it would compliment the cranberry sauce well.  Also, no oranges, but I had Clementine’s and figured it would sub just fine.

  • Tomororw I will be making my own chocolate icing from a recipe my sister gave me in our wedding cookbook.  Such a thoughtful gift.   Hubby’s 34th birthday is Sunday.  So he is getting a cake and probably some salmon for dinner. Anyone recommend something really good to do with salmon?  Normally I just bake it with lemon and rosemary.   Or something good to stick between 2 layers of yellow cake that is going to have chocolate icing? 

    PS you may have noticed that I dropped my 14 day food diary, I got sick of posting it, but I am still writing down at home.

    Here is my poor sick little helper.  We head to the doc’s at 11:40. Hope its just a cold.
